I want to play a bit of a devil's advocate here and tell you why this is not an unwatchable garbage, as many reviewers claim, but rather a very watchable garbage.
The main problem of this show lies in the failure to properly communicate the main characteristic of our MC beforehand on the author's part.
The MC is retarded. I mean it not as profanity but as a medical condition. Like Forrest Gump the hero of this story lives in his own world and deserves pity. He has an intellectual disability. It is shown many times that what is common knowledge and basic logic to many

is an enigma to him. Instead, he makes his warped irrational assumptions about everything without even realising it.
And if you approach this show from this angle, everything starts to make a lot of sense and the show becomes a good thing to binge-watch in the evening after work while having a meal.
Our character is unable to learn any complex skills (he is retarded), but he has an insane will, drive, and obsession to train, doing it over and over (you know why) with no thought. But because of his obsession and him being naturally gifted, he achieves insane strength. But lacks the self-awareness to realize that and never stops training.
The show, of course, is goofy with its comedic situations of how clueless MC's actions and motivations are misinterpreted by other people, but it is not that bad. There is no gag humor, no fanservice, no isekai bullshit with the mc rambling about how great ramen is, or some other Japanese crap. Apart from the silly premise, the show takes itself seriously.
Btw people die in this show and monsters explode into a gory mess. Not what you usually expect from a silly show, so that's a big plus too.
Bottomline if the show`s title was "Retarded Hero" or something along these lines I think many people would enjoy it.

Great premise and huge potential for a great story that quickly turns into garbage writing and kids show.
It had a good base recipe for an interesting story:
A good,hardworking, likeable adventurer who, despite all of his effort, cannot move past the limitations of his body. gets killed and finds himself to become a monster while retaining seemingly intact consciousness, personality, and memories. All while having a mad scolar/mage/love interest who is willing to hide and help him stay human on the inside.
It had no isekai BS, no harem. No stupid, silly jokes, and good art to boot.

Struggle with his growing monster urges, Getting stronger, and overcoming the limitations of his human past self, Exploring fantasy world full of guilds, dungeons, monsters, kingdoms etc.
I watched up to ep 4 after which I went to read the Light Novel since usually it is better and provides more details and a better story since anime adaptations tend to change things to fit the anime format. So I know the full story in advance.
After episode 4, the quality takes a nosedive, and it only gets worse from there. Remember the premise and all the major themes the show explores in the beginning? When you can forget it.
The show becomes extremely silly.
All the mature content gets removed. And by mature, I do not just mean blood, death, or sex.
I mean anything that an adult can enjoy. Complex and engaging story with twists and interesting and realistic human behavior. Good writing in general.
All the philosophical, moral, and dark parts just cease to exist. The author will mention them but will never actually show them.
The story becomes a collection of filler episodes and scenes that push the same things over and over without showing us any new perspective on things or character development of any kind.
The number of silly and stupid things in the later part is insane. It completely abandons the initial themes and turns into the adventures of your friendly neighbor, Spider-Man, I mean, vampire adventurer. Every Saturday at 10 a.m. at Fox Kids!

Imortant points:
-Not an Isekai (the story goes - The gods took a soul from another world, wiped his memories and made him into a sword. If you remove the "another world" part, everything stays exactly the same because his memories were wiped clean anyway)
- No fanservice, harem, echhi. At all. Fans of aforementioned genres should skip the title and head to the garbage dump where they belong.
- Generic RPG fantasy world - elfs, gnomes, magic, skills, classes etc.
- Extremely poor/dumb/lazy writing. The worldbuilding, characters, motivations, dialogue, well... everything really is just dumb.
The core ideas are not bad, their execution is.

is Wholesome. The heroine and the sword are OP AF and nothing bad can/will happen to them.
- The hero of the story is not really a sword but the catgirl
I decided to watch it because of the "wholesome and nice story in a grim world' idea. "Getting stronger, overcoming challenges", "Brutal murder of terrible people" and other things that make you feel warm, nice and fuzzy inside. And all of it is indeed there.
However! My god does the writing sucks. The sword is basically just what it is - a sword not a person.
He does not have a personality. He has no memories. Do not have a name, no personal goal or any real human thoughts or responses. In Pathfinder RPG there was an adventurer whose mind was trapped in a weapon and he acted as a person. Here the first thing the sword thinks after getting a generic lvl up by killing monsters around him - It would be nice to find a master who will wield me. Yes he is just an intelligent sword. Nothing more.
The world is DARK. Or rather it should be dark. Widespread slavery, genocide, various persecutions based on race or social standing, a world full of monsters who kill a lot of adventurers and regular people alike.
And at the same time, it is all friendship, pink ponys and rainbow atmosphere. People do not behave in an appropriate manner in such a world. Some residents of this "grim world" have morals appropriate for a peaceful developed country of our day. Not the brutal world where they exist.
It would take too long to list all things that could be improved by simply dedicating some effort to write a logically sound narrative without changing the main storyline. The bottom line - Extremely poor/dumb/lazy writing.
If you can turn off your brain and you want a wholesome and nice story in a grim world. Then I can recommend this.
For everyone else, it is a low-quality anime that you probably should skip.
